Coffee is a colour.
Is it umber, reddish-brown and the colour of the earth, raw and burnt? Or is it amber, resinous and electric, created from the alchemy of botany and rock?
This is the question we wonder sometimes as we pause and reflect upon our cuppa. The colour of the filter brew shifting with every moment that passes. Darkening with promise.
The taste of coffee in Hong Kong is the taste of the pursuit, the passion, the persistence.
Amber Coffee Brewery is the brainchild of Dawn Chan, a two-time champion in the Hong Kong Barista Championship. A fourth place finish in the World Barista Championship 2015 cemented his fame. Also, our trusted coffee whisperer Joey Mah of Artisan Roastery and Three Little Birds told us to drop by. So we did.
Years later, what we would remember is the china blue canister we brought home with us. The coffee beans have been used up, of course, brewed to satisfaction. The canister was used for many a brewing to keep my coffee grounds, whilst we lived in Bangkok.
It’s a memory, coloured by amber and umber and a flavour long gone.
