During our recent trip to Europe, we had the good fortune of stumbling upon a new method of brewing coffee. At least, it is new to us; the Karlsbad Coffee Maker has been a traditional way of brewing coffee in Germany for more than a hundred years.
What is unique about this brewing method is that it works without the use of any paper filter or metal sieve. The resultant brew has a purer aroma and full of unadulterated flavours. Also known as the Bayreuth Pour Over Brewer (or Die Karlsbader Kanne in German), this coffee pot is actually made from several detachable parts (the lid, the water filter, the coffee percolator and the pot), all hand made from porcelain.
First warm the pot with hot water before pouring the water away. Place the percolator on the pot. Grind coffee beans coarsely and pour the grounds into the percolator. Cover the percolator with the water filter. Slowly pour lightly boiled water onto the water filter which slows down the stream of water onto the grounds. After brewing, remove the percolator and water filter. Cover the pot with the lid and pour coffee into cups.
We used some Panama Geisha beans and our brew is light, fruity-floral and altogether lovely.
去年看了鄭華娟的《好笑華娟撞見維也納咖啡》后,
就對裡頭所提到的卡爾斯巴得(德)白瓷濾泡壺深感好奇。
因為書上說這種濾泡壺內具有白瓷濾網,所以無需濾紙,
咖啡不會因為一些外在因素(像咖啡壺的塑膠、濾紙等)的影響而導致風味改變,
從而更能保留咖啡的原味。
問了身邊的一些朋友,大家都沒聽過這種沖泡器;
這就更加深了我對這咖啡壺的好奇心。
這次到歐洲旅行,在機緣巧合下,
讓我打聽到慕尼黑有家咖啡館(遲些會介紹)會用這種濾泡壺來泡咖啡,而且有出售呢。
於是在回國當天,我們特地搭了老遠的火車到那家咖啡館去;
除了在那喝了兩杯用卡爾斯巴德所泡的咖啡外,
還買了一個濾泡壺和一些豆子回來。
前幾天正逢公假,無聊的我們便在家試用了這個沖泡壺。
卡爾斯巴德壺共分成四部分:壺身、濾壺、注水層和壺蓋。
1. 溫壺后,把濾壺放在壺身上
2. 把咖啡粉倒入濾壺里
3. 把注水層放到濾壺上,徐徐注水
4. 沖泡好后,把濾壺和注水層拿開,把壺蓋蓋到壺身上
卡爾斯巴德壺所沖泡出來的咖啡口感輕盈,
花香味濃郁(用的是巴拿馬藝妓的豆子),而且酸度適中,我們還滿喜歡的。
(自賣自誇中。。。。。。)
要注意的是,卡爾斯巴德壺所需的咖啡粉比起其他的手沖法來得粗些,
磨得太幼的話,咖啡粉會透過濾網直接掉入壺身,令咖啡變得混濁。
另外我們也發現煮完后的咖啡粉塌向一邊,
不知道是不是因為我們的注水姿勢不對,
導致受水的力度和方向不均勻所造成的,下次要再好好練習。
